Frozen summer drinks

This is a HOT summer. So why not cool down with a frozen drink? You can’t go wrong with a traditional piña colada or frozen margarita, but why not elevate your frozen drink?
Here are a few that I like.
Note: Often, recipes I include call for simple syrup. If you like making great cocktails, I highly recommend you make a batch of simple syrup to have on hand at all times. Store bought mixes and syrups just don’t offer the same clean, sweet tastes as boiled down equal parts sugar and water. 
Miami Vice
(This is a combination of a piña colada and strawberry daiquiri)
2 oz rum
1 cup chopped strawberries
1 oz fresh squeezed lime juice
1/2 oz simple syrup
2 oz cream of coconut (Coco Lopez is the best)
2 oz pineapple juice
Add one ounce of the rum, strawberries, lime juice and simple syrup into a blender with one cup of crushed ice. Blend smooth. Pour in a hurricane or big glass and set in the freezer. Clean blender thoroughly, add the other ounce of rum, cream of coconut, pineapple juice and one cup of crushed ice and blend smooth. Pour into the glass with the strawberry mix, resulting in a layered look. Garnish with a pineapple slice.
Strawberry Daiquiri
(Skip the store bought mixes)
1-1/2 oz white rum
1 oz rich simple syrup (use 2 parts sugar to 1 part water instead of equal parts)
3/4 oz fresh squeezed lime juice
4 to 5 large strawberries
Add all ingredients into a blender with 5 to 6 ice cubes and blend until nice and smooth.
Bourbon, Vanilla & Chocolate Milkshake
(I saved the best for last – makes 4 servings)
6 oz bourbon (use a good one like Makers Mark or Larceny)
3 cups or more premium vanilla ice cream (again, use a good brand)
1-1/2 cups whole milk
6 tbsps chocolate syrup
Put four pint glasses or big beer mugs in the freezer for at least half an hour. In a good blender, add the bourbon, ice cream, milk and four tbsps of the chocolate syrup. Add a couple of ice cubes and blend until smooth. Add more ice cream if necessary so you get a nice thick consistency. Pour evenly into the four chilled glasses and top with 1 1/2 oz of chocolate syrup each. YUM!
